Oil-Free Pumpkin Spice Granola

Ingredients
  • 3 cups rolled oats
  • ¾ cup of raw nuts (I used almonds)
  • 3 tbsp. coconut sugar
  • ¼ tsp. sea salt
  • ½ tbsp ground cinnamon
  • 1 tsp. ground ginger
  • ½ tsp. allspice
  • ½ tsp. nutmeg
  • ⅓ cup of maple syrup
  • ¾ cup of pumpkin puree
Instructions
  1. Preheat oven to 340 F.
  2. Mix the oats, nuts, spices, sugar, and salt together in a large bowl.
  3. In a small saucepan over medium-low heat, warm the maple syrup and pumpkin puree and whisk together. Once heated, pour it over the dry ingredients and mix well with a large spoon. I actually found that it works better if you use your hands to mix all of the ingredients together.
  4. Spread the mixture evenly onto a baking sheet and bake for 20 -25 minutes.
  5. Once the granola has started to turn brown, remove from the oven and let it cool completely. Transfer to an airtight container.
